Thresh & Winnow Millet Whiskey is a unique Bottled-in-Bond whiskey made from 100% organic millet -- a rare single-grain expression in American whiskey. Distilled and aged according to strict federal regulations (minimum 4 years, 100 proof), this spirit showcases the lighter, toasted sweetness of millet combined with American oak aging for a clean yet complex finish.
The Beverage Testing Institute awarded it 92 points and a Gold Medal ("Exceptional"), calling it "a fun bottled in bond that will show off as well neat as it will in an Old Fashioned, balancing fruit, light smoke and spice."
The Grain That Built a Category
KOVAL Distillery was the first distillery in the United States to use millet as the sole grain in a whiskey. When KOVAL introduced its original Millet Whiskey -- 100% organic millet, single barrel, 80 proof -- there was no American precedent for it. Millet, a prized staple grain across Asia, Africa, and parts of Europe, had simply never been treated as the foundation for American whiskey. KOVAL invented that category.
Thresh & Winnow Millet Bottled in Bond is the apex expression of that innovation. Where the original KOVAL Millet established the category, T&W Millet carries it forward at its highest level: Bottled in Bond at 100 proof, aged a minimum of four years, and produced as a single cask limited release. It is the distillery's most complete statement on what millet whiskey can be.
Tasting Profile
Aroma: Warm cereal grain, cinnamon, leather, and subtle wood char. Oiled leather, cotton, cinnamon toast, and fruit skin.
Taste: Baked grain, light melon, raw honey, and a touch of ginger and nutmeg. Wood-grilled melon, cinnamon oatmeal, and honey.
Finish: Soft spice with a lingering toast and smooth grain warmth. Honeyed and long.
Millet: Ancient Grain, American Whiskey
Millet is among the oldest cultivated crops on Earth, consumed as food for over 10,000 years and a dietary staple across sub-Saharan Africa, South Asia, and parts of East Asia. It thrives in dry conditions, resists pests without synthetic inputs, and -- uniquely among grains -- actively regenerates the soil it grows in. Farmers plant millet between rotations of other crops to restore vitality to depleted land.
In flavor, millet produces a whiskey that is clean, delicate, and distinctly its own. Lighter than corn, milder than rye, it offers a toasted sweetness with gentle grain and honeysuckle notes that reward attentive appreciation. As a whiskey grain in America it remains rare, which is precisely why Thresh & Winnow Millet represents something genuinely singular: a Bottled-in-Bond expression built on a grain almost no other American distillery has explored.

Production
Crafted from 100% organic millet, a drought-resistant and regenerative grain that produces a uniquely clean, toasted character. Distilled using only the "heart cut" and aged a minimum of four years in a federally bonded warehouse to meet Bottled in Bond requirements. Every bottle is single cask. Bottled at exactly 100 proof (50% ABV).
Millet is rare as a single-grain whiskey base, making this expression genuinely unique in the American whiskey landscape. Certified organic by MOSA (Midwestern Organic Services Association) and kosher by the Orthodox Union (OU). Grain-to-bottle production at KOVAL's Chicago distillery.
