Aged for a minimum of four years in our federally bonded warehouse and bottled at precisely 100 proof, KOVAL Bottled in Bond is an allocated release of our 100% rye whiskey. These barrels were chosen and set aside in our rick house especially for this release, delivering a bolder, spicier, more complex expression of the same organic rye grain behind our standard Rye Whiskey.
The Beverage Testing Institute awarded it 94 points and a Gold Medal ("Exceptional"), ranking it a Top 2 Rye Whiskey. Sweet cinnamon and ginger drift through the senses before settling into a rich, balanced finish.
Tasting Profile
Nose: Brandied cherries encased in milk chocolate. Cinnamon and sugar on toasted and buttered rye bread. Herbs de Provence, currants, black licorice.
Palate: Marble rye with hot butter, mesquite, and apple. Sage, cherry, raspberry, and "now and later" candy. Full-bodied and grain-forward with cinnamon-ginger spice throughout.
Finish: Rich and balanced -- bread pudding made with rye bread. Sweet cinnamon and ginger settle into warmth. A bold expression that rewards patience.
Production
KOVAL Bottled in Bond is crafted from 100% organic, unmalted rye grain sourced from a Midwestern farm collective. Distilled using only the "heart cut" and aged a minimum of four years in 30-gallon charred American oak barrels -- significantly longer than the standard KOVAL Rye. Every bottle is single barrel, individually numbered.
The Bottled in Bond designation is a federal standard under the Bottled-in-Bond Act of 1897, requiring production in a single distilling season, by one distiller at one distillery, with minimum 4-year aging in a federally bonded warehouse, and bottling at exactly 100 proof. It is one of the oldest consumer protection laws in the United States and a guarantee of quality and authenticity.

Where the standard KOVAL Rye is bottled at 80 proof and approachable from the start, the Bottled in Bond delivers the same 100% rye grain at 100 proof with minimum 4 years of aging.
