KOVAL Bottled in Bond

100% Rye | 100 Proof | Single Barrel | Organic | Kosher | Woman-Owned

Aged for a minimum of four years in our federally bonded warehouse and bottled at precisely 100 proof, KOVAL Bottled in Bond is an allocated release of our 100% rye whiskey. These barrels were chosen and set aside in our rick house especially for this release, delivering a bolder, spicier, more complex expression of the same organic rye grain behind our standard Rye Whiskey.

The Beverage Testing Institute awarded it 94 points and a Gold Medal ("Exceptional"), ranking it a Top 2 Rye Whiskey. Sweet cinnamon and ginger drift through the senses before settling into a rich, balanced finish.

Tasting Profile

Nose: Brandied cherries encased in milk chocolate. Cinnamon and sugar on toasted and buttered rye bread. Herbs de Provence, currants, black licorice.

Palate: Marble rye with hot butter, mesquite, and apple. Sage, cherry, raspberry, and "now and later" candy. Full-bodied and grain-forward with cinnamon-ginger spice throughout.

Finish: Rich and balanced -- bread pudding made with rye bread. Sweet cinnamon and ginger settle into warmth. A bold expression that rewards patience.

Production

KOVAL Bottled in Bond is crafted from 100% organic, unmalted rye grain sourced from a Midwestern farm collective. Distilled using only the "heart cut" and aged a minimum of four years in 30-gallon charred American oak barrels -- significantly longer than the standard KOVAL Rye. Every bottle is single barrel, individually numbered.

The Bottled in Bond designation is a federal standard under the Bottled-in-Bond Act of 1897, requiring production in a single distilling season, by one distiller at one distillery, with minimum 4-year aging in a federally bonded warehouse, and bottling at exactly 100 proof. It is one of the oldest consumer protection laws in the United States and a guarantee of quality and authenticity.

What Makes It Unique

Where the standard KOVAL Rye is bottled at 80 proof and approachable from the start, the Bottled in Bond delivers the same 100% rye grain at 100 proof with minimum 4 years of aging. The result is a whiskey with more intensity, more complexity, and more barrel influence -- while retaining the grain-forward character that defines KOVAL's rye program.

Five Gold medals across international competitions (2022-2024) and a 94-point "Exceptional" rating from the Beverage Testing Institute confirm what the palate suggests: this is a serious rye whiskey. The BTI panel noted "brandied cherries encased in milk chocolate" and "cinnamon and sugar on toasted and buttered rye bread" -- a fitting description for an allocated release that rewards sipping neat or elevates cocktails like the Manhattan.

Frequently Asked Questions

What does 'Bottled in Bond' mean?

Bottled in Bond is a federal designation under the Bottled-in-Bond Act of 1897. It requires the spirit to be produced in a single distilling season, by one distiller at one distillery, aged a minimum of 4 years in a federally bonded warehouse, and bottled at exactly 100 proof. It is a guarantee of quality and authenticity.

What grain is KOVAL Bottled in Bond made from?

100% rye -- a single, unmalted grain expression for maximum rye character and spice. The same organic rye used in KOVAL's standard Rye Whiskey, sourced from Midwest family farms.

How does this differ from KOVAL's standard Rye?

The standard KOVAL Rye is bottled at 80 proof (40% ABV) with no minimum age requirement. The Bottled in Bond is aged a minimum of 4 years and bottled at 100 proof (50% ABV), resulting in a bolder, spicier, more complex expression.

Is this a limited edition?

Yes. KOVAL describes it as an allocated release, with barrels chosen and set aside in the rick house especially for this release.

What does 'single barrel' mean?

Each bottle comes from one specific 30-gallon charred American oak barrel and is individually numbered. No blending across barrels.

How should I drink KOVAL Bottled in Bond?

Excellent neat or with a few drops of water to open up complexity. The higher proof also makes it ideal in cocktails like the 100% Manhattan and Old Fashioned, where the bold character stands up well against other ingredients.

Is KOVAL Bottled in Bond organic?

Yes. Made from USDA Organic certified rye grain, certified by the Midwestern Organic Services Association (MOSA).

Is KOVAL Bottled in Bond kosher?

Yes. Certified kosher under Orthodox Union (OU) supervision.

What is the UPC for KOVAL Bottled in Bond?

The UPC is 091037176953 for the 750ml bottle.
