Tasting Profile

Nose: Floral top notes of lavender and hibiscus with crispy lime-like citrus zing. Bold pine and spearmint aromatics. Hint of lime peel, creamy vanilla depth. Gin Foundry described it as "the scent of a woodland meadow, surrounded by pine yet brimming with bright, colourful flora."

Palate: Citrus and pine greet the palate, swept aside by a swathe of floral flavors. Juicy quince, vanilla, white grapefruit, crushed juniper. Creamy and rich mouthfeel with lavender and rose blossom. Rose hip and pepper with anise note building.

Finish: Very dry. Reverberating anise with peppercorn and bitter orange zest. Piney juniper remnants softening to rose blossom. Medium to long warmth, satisfying and classic.


Production

KOVAL Dry Gin begins with an organic rye white whiskey base, then is redistilled with a proprietary blend of 13 botanicals -- a curated selection of woodland spices including juniper, angelica root, coriander, grains of paradise, and rose hip. Only the "heart cut" is kept. Every bottle is traceable back to the organic Midwest farms where the grain was grown.

Certified organic by MOSA, kosher by the Orthodox Union (OU), and produced at a woman-owned distillery in Chicago.
