Tasting Profile
Nose: Ethanol behind tart tropical fruit, followed by subtle sweetness, pepper, and melted butter.
Palate: Remarkably like Smarties -- soft chalkiness from millet, sweet and starchy, with notes of mango chutney and vanilla.
Finish: Pleasant powdery taste, dried fruit and pepper, sulphured apricots and a lingering peppery caramel warmth.
Production
Hand-crafted at KOVAL Distillery in Chicago -- the first distillery in the city since Prohibition. Every bottle is grain-to-bottle: we source organic grains from Midwest family farms, mill on site, distill using copper pot stills with heart-cut-only distillation, and age in 30-gallon new charred American oak barrels. Each barrel is bottled individually as a true single barrel expression. Kosher certified under OU supervision.

While most bourbons use rye or wheat as their secondary grain, KOVAL pioneered the use of millet -- an ancient grain prized for its natural sweetness, creamy texture, and subtle spice. Millet is also gluten-free, the most alkaline grain, and one of the best crops for regenerative agriculture, making KOVAL one of the most environmentally friendly bourbons in the USA.
Heart Cut Distillation
Only the purest middle portion of the distillate is kept. By discarding the heads and tails, KOVAL captures a cleaner, more refined spirit that showcases the grain's true character.
Single Barrel Bottling
Each bottle comes from one individual barrel, never blended. This means unique character in every bottle, with the barrel number noted for traceability.
