Established in 2008, KOVAL is Chicago’s first distillery since the mid-1800s. Our founders, Dr. Robert Birnecker and Dr. Sonat Birnecker Hart, left careers in academia to make spirits from scratch in the city they love.
By using only the heart cut of the distillate, KOVAL creates whiskey that is brighter, cleaner, and grain-forward. Each product is handcrafted in Chicago from local, fresh, and organic ingredients — from milling the grain on-site to filling every American White Oak barrel by hand.

Spaces range from an intimate classroom overlooking the distillery, to an elevated cocktail lounge, to the distillery floor itself.

Whiskey
Bourbon
Comprised solely of corn and millet. Balanced and approachable, with notes of mango chutney and vanilla, finishing on peppery caramel.
Rye
A mash bill of 100% rye grain — the purest expression possible. Fresh and bright, with mellow sweet notes of maple and candy corn, and a classically spicy finish.
Four Grain
Distilled from oat, malted barley, rye and wheat. Banana sweetness, rich earthen tones, and a smooth creamy palate. Perfect straight or with a sphere of ice.

10 Year 100% Rye Whiskey
A 10-year-old 100% Rye that becomes the life of any party. Freshly cracked pepper and sun-dried apricot on the nose; velvety vanilla, dark chocolate, and warm spice on the palate.
American Single Malt Whiskey
100% organic malted barley. Roasted grains, acacia honey, and chestnut cream on the nose; butter toffee and caramel fudge on the palate, with a long finish of distant campfire and gentle oak.
Yuzu Premium Citrine Gin
The zesty, aromatic profile of Yuzu — a citrus fruit deeply embedded in Japanese culinary heritage. Vibrant citrus character with delicate floral undertones.
Shiso Premium Foret Gin

Mash Bill: 49% Millet, 51% Corn. Austrian brandy tradition meets midwestern Bourbon — baked pears, marzipan, dark chocolate orange peel, woody sassafras, and smoky black tea.
