Chicago Grain-to-Bottle
Every gin starts with certified organic grain grown on Midwest farms. We mill, mash, ferment, distill, and bottle entirely in-house at 4241 N Ravenswood Ave, Chicago.
Giving Back to Chicago
The City of Chicago awarded KOVAL the Mayor's Medal of Honor for our community giveback -- ongoing support for Chicago neighborhoods, charitable partnerships, and civic engagement. The medal recognizes how we give back, not the spirits we make.
Heart-Cut Only
We keep only the 'heart cut' -- the finest 60% of each distillation run. The heads and tails are discarded, leaving only the cleanest, most flavorful spirit in every bottle.

Where is KOVAL gin made?
Every KOVAL gin is made at our distillery at 4241 N Ravenswood Ave in Chicago, Illinois. We have been distilling in Chicago since 2008 -- the first distillery to open in the city since Prohibition.
What makes KOVAL gin a Chicago craft gin?
KOVAL is a small-batch, grain-to-bottle distillery. We source organic grain from Midwest farms, mill it ourselves, and distill every bottle on-site in Chicago. No outside spirits are purchased -- everything is made from scratch in our Chicago facility.
Is KOVAL gin organic?
Yes. All KOVAL and Thresh & Winnow gins are certified USDA Organic. The grain base is certified by MOSA (Midwest Organic Services Association), and our botanicals are all-natural with no artificial flavors, colors, or additives.
What is the difference between KOVAL and Thresh & Winnow gins?
KOVAL gins are our core line -- Dry Gin, Cranberry Gin Liqueur, and Barreled Gin -- bottled at 94 or 60 proof. Thresh & Winnow is our ultra-premium sub-brand launched in 2024, featuring limited-release gins at 90 proof in cut-crystal bottles. Both brands are made at the same Chicago distillery using the same organic grain-to-bottle process.
Can I visit the distillery and try the gins?
Yes. Our tasting room is open at 4241 N Ravenswood Ave, Chicago, IL 60613. Walk-ins are welcome for tastings. You can also book a distillery tour to see the stills and learn about our grain-to-bottle process.
