A unique spirit that delights both gin and whiskey lovers alike, KOVAL Barreled Gin is crafted with the same prized 13-botanical recipe as the Dry Gin, but with new levels of citrus, spice, and light butterscotch sweetness that come from its maturation in a KOVAL whiskey barrel. Named Best Wood-Aged Gin of the Year at the 2023 Meininger's International Spirits Awards.

Tasting Profile

Nose: Caramelized top notes of honeyed thyme and caramel. Vanilla, juniper, coriander, and rose hip tea. Florals of lavender and angelica with oak wood depth.

Palate: Vanilla and vanillin (near-universal among reviewers). Oak and wood spice, caramel and butterscotch sweetness. Juniper and pine still present. Baking spice, black pepper, clove. Malt, marshmallow, rose, and lavender florals. Toasted coriander seed.

Finish: Long. Wood spice and nutmeg with gentle lingering warmth. Black pepper and clove sizzle. Piney juniper remnants softening to rose blossom.


Production

KOVAL Barreled Gin begins as the same 13-botanical gin distilled from an organic rye white whiskey base. After distillation with the proprietary botanical blend, the gin is aged in KOVAL's own charred whiskey barrels for approximately 6 months, adding golden color, vanilla, butterscotch, and oak complexity while preserving the botanical character underneath.

Certified organic by MOSA, kosher by the Orthodox Union (OU), and produced at a woman-owned distillery in Chicago.
