Product & Mash Bills

What is the mash bill of KOVAL Bourbon?

51% corn and 49% millet. While most bourbons use rye or wheat as their secondary grain, KOVAL uses millet for its natural sweetness, creamy texture, and subtle spice.

Why does KOVAL use millet instead of rye or wheat?

Millet is naturally free of gluten proteins, the most alkaline grain, and one of the best crops for regenerative agriculture. It adds a sweet, nutty flavor profile and creamy mouthfeel that sets KOVAL Bourbon apart from traditional bourbons. As with all distilled spirits, please consult your physician if you have celiac disease or severe gluten sensitivity.

What is KOVAL Rye Whiskey made from?

KOVAL Rye is made from a mash bill of 100% organic rye grain, sourced from a Midwestern farm collective. Most rye whiskeys use only the 51% rye minimum required by law -- KOVAL uses 100%.

Is KOVAL whiskey organic?

Yes. KOVAL Bourbon, Rye, and other whiskeys are made from USDA Organic certified grains sourced from Midwest family farms. KOVAL is certified organic by the Midwestern Organic Services Association (MOSA).

Is KOVAL kosher?

Yes. KOVAL spirits are certified kosher under Orthodox Union (OU) supervision.

What does 'heart cut' mean?

Heart cut means only the purest middle portion of the distillate is kept. KOVAL discards the heads and tails, using only the cleanest, most flavorful center of each distillation run.

What does 'single barrel' mean?

Each bottle of KOVAL single barrel expressions comes from one individual barrel, never blended. This means slight, unique variations between barrels, with the barrel number noted on each bottle.

What is the ABV of KOVAL Bourbon?

KOVAL Bourbon is bottled at 47% ABV (94 proof). The Bottled in Bond variant is 50% ABV (100 proof).

Where are KOVAL spirits made?

All KOVAL spirits are distilled at 4241 N. Ravenswood Avenue in Chicago, Illinois. KOVAL was the first distillery to open in Chicago since Prohibition.
