Tasting Profile
Nose: Rich bouquet of roasted grains, acacia honey, and chestnut cream. Toasted orange peel, young cereal grain, toffee. Fresh pine, cinnamon, and white sugar crystals.
Palate: Butter toffee and caramel fudge. Fresh cracked black pepper and vanilla join with toasted orange to give the impression of an orange Creamsicle. Syrupy texture with flavors of cream, pine, and confectionary sweetness.
Finish: Long and warm -- a lasting impression of oak and sweetness. Distant campfire and gentle oak spice. Baking spices and subtle oak tannin with balanced warmth.

Thresh & Winnow is KOVAL Distillery's ultra-premium sub-brand, launched in September 2024. The name refers to the agricultural process of separating grain from chaff -- an apt metaphor for distilling spirits down to their purest expression. Presented in a cut crystal bottle designed by Dando Projects (Best in Show, 2025 Craft Spirits Packaging Awards).
Production
Crafted from 100% organic malted barley sourced from local farms near the Wisconsin border. Distilled using only the "heart cut" -- the finest middle portion of the run -- and aged for 8 years in charred new American oak barrels in a warehouse outside Chicago. Every bottle is single cask and individually numbered. Bottled at 100 proof (50% ABV).
Certified organic by MOSA and kosher by the Orthodox Union (OU). Grain-to-bottle production at KOVAL's Chicago distillery.
