Thresh & Winnow Millet Whiskey is a unique Bottled-in-Bond whiskey made from 100% organic millet -- a rare single-grain expression in American whiskey. Distilled and aged according to strict federal regulations (minimum 4 years, 100 proof), this spirit showcases the lighter, toasted sweetness of millet combined with American oak aging for a clean yet complex finish.

The Beverage Testing Institute awarded it 92 points and a Gold Medal ("Exceptional"), calling it "a fun bottled in bond that will show off as well neat as it will in an Old Fashioned, balancing fruit, light smoke and spice."


Tasting Profile

Aroma: Warm cereal grain, cinnamon, leather, and subtle wood char. Oiled leather, cotton, cinnamon toast, and fruit skin.

Taste: Baked grain, light melon, raw honey, and a touch of ginger and nutmeg. Wood-grilled melon, cinnamon oatmeal, and honey.

Finish: Soft spice with a lingering toast and smooth grain warmth. Honeyed and long.

Thresh & Winnow is KOVAL Distillery's ultra-premium sub-brand, launched in September 2024. The name refers to the agricultural process of separating grain from chaff. Presented in a cut crystal bottle designed by Dando Projects (Best in Show, 2025 Craft Spirits Packaging Awards).


Production

Crafted from 100% organic millet, a drought-resistant and regenerative grain that produces a uniquely clean, toasted character. Distilled using only the "heart cut" and aged a minimum of four years in a federally bonded warehouse to meet Bottled in Bond requirements. Every bottle is single cask. Bottled at exactly 100 proof (50% ABV).

Millet is rare as a single-grain whiskey base, making this expression genuinely unique in the American whiskey landscape. Certified organic by MOSA and kosher by the Orthodox Union (OU). Grain-to-bottle production at KOVAL's Chicago distillery.
