Who doesn't love a little spice? This 10-Year-Old 100% Rye Whiskey is the kind of spirit that shows up to the party and immediately becomes the life of it. Crafted from organic rye that has had the good fortune of aging gracefully in the Midwest for a full decade, this is KOVAL's longest-aged whiskey expression.
The Beverage Testing Institute awarded it 92 points and a Gold Medal ("Exceptional"), noting it "really pops with the earthy flavors of the rye, highlighted with pepper spice, light herbs, and barrel vanilla and baking spices."

Tasting Profile
Nose: An inviting mix of freshly cracked pepper and sun-dried apricot. Caramel corn, creme brulee, pickled ginger, and sassafras. Grilled tropical fruits and vanilla mint candy join honey-soaked orange peel.
Palate: Layered complexity -- velvety vanilla and a hint of dark chocolate. Orange and caramel, cinnamon and pepper on bananas foster, maple and rye bread. Rich and creamy vanilla custard with a silky texture. Dried apple, cinnamon, buttered rye bread, and peppercorns.
Finish: A lingering medley of warm spices with a delicate cinnamon and oak undertone -- a testament to ten years of meticulous aging. Drier rye and spice notes with sticky white sugar frosting, cream, and nice warmth.

Thresh & Winnow is KOVAL Distillery's ultra-premium sub-brand, launched in September 2024. The name refers to the agricultural process of separating grain from chaff -- an apt metaphor for distilling spirits down to their purest expression. The line focuses on organic grains, high-integrity aging, and craft-level finishing, presented in a cut crystal bottle designed by Dando Projects (Best in Show, 2025 Craft Spirits Packaging Awards).
Production
The 10 Year Rye is crafted from 100% organic rye grain, distilled using only the "heart cut" and aged for a full decade in the Midwest. Every bottle is single cask -- drawn from one individual barrel and individually numbered. At 100 proof (50% ABV), it delivers the bold, full-strength character that a decade of maturation in oak deserves.
Certified organic by MOSA (Midwestern Organic Services Association) and kosher by the Orthodox Union (OU). Grain-to-bottle production at KOVAL's Chicago distillery.
