Thresh & Winnow is KOVAL Distillery's ultra-premium sub-brand, launched in September 2024. The name refers to the agricultural process of separating grain from chaff. Presented in a cut crystal bottle designed by Dando Projects (Best in Show, 2025 Craft Spirits Packaging Awards).
Production
Crafted from 100% organic wheat -- a grain prized for producing smooth, approachable whiskeys. Aged for a full twelve years in American oak, this is one of KOVAL's longest-matured expressions. Every bottle is single cask. Bottled at 100 proof (50% ABV).
