Thresh & Winnow Brandy Cask Finish Bourbon is a straight bourbon made with organic corn and millet, then finished in fruit brandy casks for a unique layer of warmth and soft fruit influence. Bottled at 100 proof, it blends the grain-driven structure of a classic bourbon with a subtle finishing touch that enhances richness and body.
The Beverage Testing Institute awarded it 89 points (Silver, "Highly Recommended"), calling it "a really interesting array of exotic spices and mints" and "a fun choice for creative cocktail play."
Tasting Profile
Aroma: Toasted caramel, vanilla, and subtle dried fruit with hints of oak spice. Exotic spices and mints from the brandy cask influence.
Taste: Balanced layers of grain, soft brown sugar, charred oak, and a touch of raisin and stewed apple. The fruit brandy cask finish adds a mild lift of fruit warmth throughout.
Finish: Long and clean with caramelized sweetness, oak tannin, and a faint fruit echo from the cask finish.

Thresh & Winnow is KOVAL Distillery's ultra-premium sub-brand, launched in September 2024. The name refers to the agricultural process of separating grain from chaff. Presented in a cut crystal bottle designed by Dando Projects (Best in Show, 2025 Craft Spirits Packaging Awards).
Production
Crafted from organic corn and millet (51/49) -- the same grain bill as the standard KOVAL Bourbon -- and distilled grain-to-bottle at KOVAL's Chicago distillery. After initial maturation, the bourbon is finished in KOVAL's own fruit brandy casks, which add subtle dried fruit, raisin, and stewed apple character. Every bottle is single cask. Bottled at 100 proof (50% ABV).
Certified organic by MOSA and kosher by the Orthodox Union (OU).
