The High Ryes

Alex Uribe, Bistro Campagne, Chicago, IL

1 oz KOVAL Rye Whiskey
1 oz North Shore Aquavit
1/2 oz KOVAL Caraway Liqueur
1/2 oz Honey Syrup
1 dash Bittercube Orange Bitters
Shake, Strain into a chilled rocks glass
and garnish with a lemon twist.

Seeded Rye Julep

Scot Mattox, Iris, New Orleans, LA

Mix in a julep cup:
1 barspoon Superfine sugar
3 Pieces of lemon peel in the bottom
1 Fresh sprig of thyme
*Very lightly press the lemon peels and sugar together using a muddler.
1 oz KOVAL Caraway Liqueur
2 oz KOVAL Rye Whiskey
Swirl to dissolve the sugar. Beat ice until finely crushed, mix some into the julep cup, and keep adding ice until there is a rounded cone on top -a julep should be very icy, like a New Orleans snowball.
