Made once a year, our apple brandy is made from mostly organic gala apples that have been cored by hand and checked over for any bruises (any of which are also removed by hand). We do this - apple by apple - for about 7 tons of apples. They are then mashed (or crushed up into a rough apple sauce) and fermented. Once ready the apple mash is distilled and then aged in new American oak casks for at least 6 months. 100% apples, never anything else.
